Pork apple burger

Makes 4 burgers

Ingredients

500g lean Pork Mince
1 egg, beaten
1 small onion, grated
2 tablespoons chopped fresh parsley
1 teaspoon Worcestershire or soy sauce
1 large Granny Smith or Gala Apple, peeled,
cored and cut into 4 thick rings
4 thick slices mozzarella cheese cut to
the same size as the apple rings
flour, for coating
2-3 teaspoons olive oil

Method

In a large bowl, combine the mince, egg, onion, herbs and sauce. With wet hands, shape into 8 burgers, 1cm larger than the apple.

Place a slice of apple on 4 of the burgers, followed by the cheese. Place remaining burger on top and pinch edges to seal.

Roll in flour and BBQ, grill or char-grill in pan heated with olive oil for 7-8 minutes on each side or until browned and cooked through.

Serve with salad or on a barbequed burger roll.
