Chicken, apple and celery salad

To celebrate the 20th anniversary of the Granny Smith Festival, we bring you this easy recipe with the tasty green apple.

Preparation 10 minutes
Cooking time no cooking required
Serves 4

Ingredients

1 barbecued chicken,
2 sticks celery
2 Granny Smith apples
½ cup raisins
½ cup (120 ml) mayonnaise
2 tbs finely chopped chives
¼ cup cashew nuts, roughly chopped
50g soft lettuce leaves

Method

  1. 1 Remove the skin and bones from the chicken and dice the meat. Put in a large bowl. Finely slice the celery and add to the bowl.
  2. 2 Quarter and core the apples and dice. Add to the chicken, celery mixture. Stir through the raisins. Gently toss together with the mayonnaise and chives and season to taste with salt and black pepper
  3. 3 Place the lettuce leaves on 4 plates or one serving plate. Spoon the chicken salad on top and sprinkle with the cashew nuts.

This salad can also be used as a filling for sandwiches, pita pockets or bread rolls.
